After my 1.5lb gain i was determined to get back on the SW waggon! SO i bought 2 new books, the one pot book & the little book of soups.
I first of all made the pea and mint soup. OMG please PEAS!? I dont know why i decided on this recipe. I HATE peas! However, the picture looked nice so i was inspired. I WAS NOT DISAPOINTED! It was really delish, cheap to make and i didnt waste ANY of it! The mint gave a really nice and unique flavour and the peas, well tasted lie peas, but in a good way!
The second recipe i tried was the creamy corriander chicken. As ive been busy with work and doing my house i wanted something quick and easy.; This was just the thing, and it was really tasty too!
The final dish i spicy beef and red pepper stew..... If you cook one recipe this Jan please make it this one. I did it in the slow cooker for about 9 hours so perfect to come home to after work. Its so flavoursome! The red peppers are really sweet and taste almost like tomatoes. Its easy to do with just putting everything in. The cinnamon stick was reused from yesterdays corriander chicken too so had some left over flaovours from that!
Really yummy! Cany wait to try more recipes from the book tomorrow
